Broccoli Salad

Serves 4

Ingredients

¾ cup nonfat mayonnaise
¼ cup erythritol
1 tablespoon white vinegar
1 large head of broccoli
1 onion, diced
4 pieces turkey bacon, cooked and crumbled
½ cup goat cheese, crumbled
¼ cup sunflower seeds

Directions

  1. Combine mayonnaise, erythritol, and vinegar. Mix well, cover, and place in refrigerator for 1-2 hours.
  2. Cut broccoli into small flowerettes. Add onion, bacon, goat cheese, and sunflower seeds.
  3. Mix in dressing and serve.
